An Homage to Apples

Whether you’re clinging to the last, lazy bits of summer or eager to be walking down Locust Walk, fall is coming, ready or not.  Personally, I am ready for one reason. School? Kind of. Downtowns? Obviously. (Just kidding, no.) This reason is fall produce—and specifically, apples.

Apples are one of my favorite things in the world. Eaten plain as a healthy snack or baked into something totally sinful like pie: either way, they are fall’s greatest treasure. I went apple picking this past weekend, and my house has quickly become an actual orchard. I’d like to share two of my favorite apple-mania creations—and if you so desire, grab some apples (Penn’s farmers’ market offers a great selection), and welcome yourself to fall in the most delicious way possible.

APPLE SAUCE

This is as simple as it gets. Apples simmer in cinnamon, honey, and a little lemon zest to bring out their natural sweetness and then get mashed into a heavenly sauce. It only uses one pan, so it’s a super easy clean up. Did I mention it’s healthy?

Ingredients:

10 apples, peeled, cored, and chopped

½ cup water

1 tsp cinnamon

1 tbs lemon zest

1 tbs honey

Recipe:

Peel, core, and cut your apples. In a large skillet, combine the apples, water, cinnamon, honey, and zest. Mix well, turn the heat on medium-high, and cover. Cook for about 25-30 minutes, stirring every so often until the apples are mushy and turn into the desired consistency. For fine texture, puree; for chunky, mash softly. Let cool, and eat warm with a sprinkle of cinnamon.

APPLE CRISP

This apple creation corrupts this fruit’s virtuous nutrition stats and uses its flavor in a wickedly tasty way. Apples get baked and caramelized with brown sugar and butter, and then get topped with a crusty oatmeal crumble. Eat it with some vanilla ice cream, and you are more than good-to-go.

Ingredients:

5 apples, sliced into half moons

3 tbs butter

½ cup brown sugar

1tsp cinnamon

Additional Ingredients for crumble topping:

1 cup flour

¾ cup brown sugar

1 ½ cup oatmeal

2 tbs maple syrup

1 stick butter

Recipe:

Preheat the oven to 375 degrees. In a large skillet, melt the butter over medium heat. Once melted, add the brown sugar and let sit without stirring for about 2 minutes. Add the cinnamon and apples and cook until tender, about 10 minutes. Pour the mixture into a greased casserole dish.

Meanwhile, combine all the ingredients for the topping. Combine using an electric mixer or your hands to cut the butter into the dry ingredients. Crumble the topping on top of the apples. Bake for 20 minutes, until golden brown, with apples bubbling.
